Kayleigh's Cooking: Pasta with Mince and Tomato and Garlic Sauce

Hi everyone

So cooking is one of my biggest passions in my life, I absolutely love it, so I thought that I would get back into my Blog and start a new mini series of posts called Kayleigh's Cooking.
I will say that alot of my cooking isnt measured and i dont really use recipie books very often, However i do have lots of them, I just cook things that I like to eat mainly, I also love cooking for other people.

So here is my 1st post in this series, Pasta with Mince and Tomato and Garlic Sauce, this is a favorite of mine and i make it alot for my lunch,

(Serves 2)

250g Beef Mince
1/2 Yellow Pepper
8 Closed Cup Mushrooms
1/2 Tin Chopped Tomatos
Dash Nando's Sweet Chilli Sauce
4 Garlic Cloves
Teaspoon Tomato Puree
Olive Oil
Handful Diced Onion
2 Handfulls Dried Pasta
Teaspoon Redcurrent Jelly




First thing I did was to put the pasta into a pan and add some salt to make the water boil at a higher temperature,


Then I got out my mini food processor and added the chopped tomatoes, garlic and sweet chilli sauce,



And then blended these all together to make my sauce for my pasta,


I then heated up some olive oil in a wok on a high heat, and added a handful of diced onion,



I have really sensitive eyes and onions absolutely kill them so I have found a little cheat way to use onions in my cooking, this is frozen diced onion that i get from Iceland, it is £1 a bag, and I just leave it in the freezer and take out however much I need at any one time,


Once the onions are softened add the mince and fry off untill browned, then add the chopped pepper and the mushrooms (which I cut into 4) then fry these off in the remaining oil with the onions and mince. Then poor the sauce over all of this in the wok and cook for about 20 minutes.


Once the pasta is cooked drain the water off, a little trick I use if the pasta is cooked before the meat and sauce is to put the pasta back into the pan as it is still hot, then put the lid back on and put it back on the side of the hob, (this works with our hob as it is hallogen so is flat)


Once the mince is cooked I add the teaspoon of redcurrent jelly and stir that in,


Then i add the pasta to the mince and sauce and stir it in,


This will also help to reheat the pasta if it has cooled down a bit after being drained. this is now ready to serve, i love having pasta with garlic bread, this is a meal that i have alot for my lunch at home and at university, because it is quick to make and doesnt break the bank.

NOTD: Bright Baby Pink

Hi Guys
I have enjoyed used many different nail polishes recently! :) And I have been trying out some new colours and things like that.

When I got my December Feel Unique Beauty Box I recieved a Nails Inc polish in Oxford Circus. It is actually the only pink nail polish that I own, however i really want Orly's Oh Cabanna Boy. I am not the most pink girl in the entire world but I am really happy with the look of this one and I think that I will be planning on getting some more pink things and especially wearing some some pink nail polish.




So here it is on my nails, I think it is a beautiful colour and I am glad that I got sent it because I would have never picked this myself. It does look brighter in person than on this photo but it is still lovely. It is only a small bottle but I dont think that it matters because I never use all of a bottle of nail polish anyway! :)

I will be doing more of these Nail of the day posts so keep a look out for them!

Love: Body Shop!

Hi guys, so today I went to the Body Shop because I saw that they had a sale on, I only bought 2 things but they were such good deals! Firstly I got the Lychee Blossom Body Butter, I got the 200ml size and it was on sale for an amazing £5.00!! Down from £12.50!! Hence why I couldnt resist buying it! :)


I am a massive fan of the Body Shop Body Butters and have got 2 others, Cranberry and Mango, but I had never actually seen this fragrance one before so I smelt it in the shop and smelt absolutely devine so I had to have it! I am a lover of fruity scents anyway so this is right up my street! It says that it is for normal to dry skin which is perfect for me as my skin changes. Depending on the weather etc. It does contain Lychee extract aswell so I bet that is the reason it smells so yummy! :) I also think the packaging is amazing too! I love the bright pink pot with the white lid and the label has flowes on, I think that it looks really summery. I took a picture beforeIi used it tonight after I got out of the shower so that it wasnt used on the photo. But I have used this tonight and it doesnt dissapoint. The smell is just as good if not better on your skin and it lasts for a very long time! It also seemed to sink into my skin very quickly, I put my PJ's on after a couple of minutes. I definately love this body butter and am so glad that I purchaced it, even at its full price of £12.50 i I think that it is worth the money and I would definately repurchase at the full price!

The second product that I bought was the Cranberry Joy shower gel. This was priced at £2.00! I am not too sure how much it should have been but £2.00 is great for me for a 250ml product! The reason I purchased this is because the Cranberry Body Butter is my favorite one that the Body Shop does and i always get one for christmas! My Auntie was the one to get it for me this year! it has been different names in the past but it still seems like exactly the same product.


This is the bottle, I love the packaging and it smells amazing aswell! The shower gel itself was very good too, didnt feel drying on my skin and lathered up great into a foam, (I hate shower gels that dont do that!!)

So anyway i hope you all liked this and i may have inspired you to pop out and see what they have in your local Body Shop! The boy in the store told me that it was on for another week or 2 so get cracking :)

NOTD: Accent Nail

Hey Guys!
So I have just pained my nails and was really happy with them so I decided to do a Nail of the day post for you!


Here is what i decided on today, I basically wanted to do something random after spending most of my day doing Uni work :(



On all of my nails except my ring finger I have Barry M's Nail Paint in 310 Mushroom. This is one of my favorite nail varnishes and i wear it alot because it is so neutral, i think it is the only neutral nail varnish i own,




And on my ring finger i have OPI's Nail Lacquer in Rumples Wiggin. I absolutely love this colour, I did have this on all of my nails the other week and I absolutely loved it, I usually wear quite dark or bright nail colours and I think that this is a nice change for me.  
I have also used my standard Base and Top coat.



Sally Hansen Hard as Nails has always been a great staple for me as I am a great fan of Acrylic Nail extensions and even though they look great after having them removed my nails are a little bit worse for wear! I have found this to be a saviour :)

Also Sally Hansen Insta-Dri Top Coat has got to be one of the best if not the best top coat that I have ever tried! I still want to try her Mega Shine top coat but for now this is working for me just fine.

I had never tried the accent nail trend that is going round at the moment, mainly because I havent got all of my nail varnishes here with me at home. however I do really like it and when I get back to university I will be trying this with some other colours that I have in my nail polish collection.

So anyway guys I hope that you are all doing well and that you enjoy this post, I will be trying to come up with some new things that i can post about on here so keep your eyes peeled.

New Years Resolutions

HAPPY NEW YEAR!
I hope you all had a great New Years Eve! I certainly did, and as it is the new year i thought i would do a post on my 2012 resolutions for you. To me they shouldnt be things just because you think you should or that you know you wont be able to do. They should be things that you want to do and think will be acheiveable.


  1. I want to spend my money wisely, I spend alot of my money on things that I dont need and I would rather not do that and save it up for 'A rainy day' or for something in perticular.
  2. I want to pass my driving test, this kind of links in with the first one as if i save money I will be able to afford to pass quicker and will be able to pay for it.
  3. I want to try out more recipies. I absolutely love cooking and since moving to Uni i have already started this but i want to do it more. I have a massive collection of cook books and they dont really get used so I want to try more things out of them.
  4. I am going to make more effort to see my family, as I do not see much of my Dad's side of the family, and along the same line my friends. As most of them are at Uni I dont get to see them very often unless we are all home at the same time so I am going to make plans to go and see them or for them to came and stay with me.
  5. I want to get my teeth straightened. Over the last about 6 months i have had alot of work done on my teeth under IV sedation and now they are all repaired and I had many taken out, (I do have a massive fear of dentists aswell) so seen as i went through about 5 hours worth of treatment I think that I might as well get braces to make them look how i want them to.
So here are all of my resolutions for 2012. I am really looking forward to this year and I hope that you are too! I did take some photographs on NYE and I am going to upload them when I get my camera back from my boyfriends house, I have got some of the fireworks we had too! So I thought for now I would just add 1 photo that one of my friends took! :)



This was after many drinks and at about 3:00am!
